Easy Pumpkin Roll

Crisco® Original No-Stick Cooking Spray
3/4 cup Hungry Jack® Complete Pumpkin Spice Pancake & Waffle Mix
1/3 cup sugar
1/4 teaspoon salt
4 large eggs
1 (8 oz.) package cream cheese, softened
1 cup powdered sugar, plus additional for garnish
1 teaspoon vanilla extract

Preparation Directions:
1.HEAT oven to 400°F. Coat 15x10x1-inch jelly roll pan with no-stick cooking spray. Line with wax paper. Coat wax paper with no-stick cooking spray.
2.WHISK together pancake mix, sugar, salt and eggs in large bowl until smooth. Spread batter evenly into prepared pan. Bake 8 to 10 minutes until toothpick inserted in center comes out clean. Immediately invert cake on top of clean towel. Carefully peel off wax paper. Let cool 10 mintues.
3.BEAT cream cheese, powdered sugar and vanilla in large bowl until smooth. Spread evenly over cake. Roll up cake, beginning with the narrow end. Wrap tightly in plastic wrap. Chill 2 hours. Sprinkle with powdered sugar. Cut into 12 slices.
