Ingredients

CREPES

  • 1 cup Hungry Jack® Complete Buttermilk Pancake & Waffle Mix (Just Add Water)
  • 2 tablespoons sugar
  • 1 cup water
  • 2 large eggs
  • Butter Flavor No-Stick Cooking Spray

SAUCE

  • 3/4 cup Hungry Jack® Butter Flavored Syrup
  • 1/3 cup firmly packed brown sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chopped pecans

FILLING

  • 1 pint (2 cups) vanilla ice cream

Preparation Instructions

  1. COMBINE pancake mix, sugar, water and eggs in a medium bowl. Whisk until batter is smooth. Heat an 8-inch skillet or crepe pan. Spray with no-stick cooking spray between each crepe. Pour 2 tablespoons batter into preheated skillet, immediately tilting pan until batter covers bottom. Cook until edges start to dry and center is set. Turn to brown second side.
  2. COMBINE syrup, brown sugar, vanilla and pecans in a microwave-safe bowl. Microwave on HIGH (100% power) 40 seconds. Stir until smooth.
  3. SPOON about 2 tablespoons ice cream onto center of each crepe. Fold in the four edges of the crepe fold like an envelope: fold up the bottom up toward the center; repeat with left and right sides and the top. Place folded side down on serving plate. Spoon 1 tablespoon maple butter pecan sauce over each filled crepe. Serve immediately.
