Ingredients
- No-Stick Cooking Spray
- 1 (7 oz.) package Hungry Jack® Easy Pack™ Funfetti® Holiday Buttermilk Pancake Mix
- 1/4 cup sugar
- 1/2 cup cocoa powder
- 1 large egg
- 1/2 cup milk
- 1/4 cup Pure Vegetable Oil
- 1/2 cup butter, softened
- 1 cup marshmallow creme
- 1 cup powdered sugar
- 1/16 teaspoons peppermint extract
- Holiday-colored sprinkles, if desired
Preparation Instructions
- HEAT oven to 375°F. Coat baking sheet with no-stick cooking spray.
- WHISK pancake mix, sugar, cocoa powder, egg, milk and oil in a medium bowl until smooth. Drop batter by rounded tablespoonfuls, 2 inches apart, onto prepared baking sheet. Top with additional holiday sprinkles, if desired. Bake 6 to 8 minutes until toothpick inserted in center comes out clean. Remove to wire rack to cool completely.
- BEAT butter, marshmallow creme, powdered sugar and peppermint extract in medium bowl with electric mixer on medium speed until light and fluffy, about 2 minutes. Spread 1 tablespoon filling on flat side of 12 pies. Top with remaining pies, rounded side up, to form whoopie pies.
