Holiday Funfetti® Cookies
- No-Stick Cooking Spray
- 1/4 cup Butter Flavor All-Vegetable Shortening
- 1/2 cup firmly packed dark brown sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 1 (7 oz.) package Hungry Jack® Easy Pack™ Funfetti® Holiday Buttermilk Pancake Mix
- 3/4 cup red and green candy-coated chocolate pieces
- HEAT oven to 350°F. Coat baking sheet with no-stick cooking spray.
- BEAT shortening and brown sugar in medium bowl with electric mixer on medium speed until blended. Add egg and vanilla. Beat until smooth. Blend in pancake mix. Stir in candy pieces. Drop by tablespoonfuls onto prepared baking sheet.
- BAKE 6 to 8 minutes or until edges are lightly browned. Cool on baking sheet 1 minute. Remove to wire rack to cool completely.
